HOW DO YOU COOK SO MUCH AND GO TO SCHOOL AND MAKE GOOD GRADES??
The answer is: I don’t make good grades.
Also, not everything I cook is complicated. A lot of times, if I know I have tests, I will marinade the meat overnight and just throw it in the oven to bake and roast some vegetables while I’m at it or just eat a salad. So even though I’m in the middle of finals, I managed to bake some chicken legs to eat for a couple days. My friends love this dish – its saucy, a little spicy, sweet and tangy and easy schmeazy to make. Dump some sauce, mince some garlic and bake. Also, feel free to make more sauce if you don’t think is enough, but keep in mind, the chicken will juice out too.

“Strawberry lemon…ade? That’s an awfully long name, why can’t they be strawberry lemon cupcakes?”
Since I went and bought cupcake liners, I decided I had to bake cupcakes one more time before I move out and before finals really start. So I used the cupcake recipe from Love and Olive Oil and the Buttercream from How Sweet Eats with a few tweaks of course. So I ended up making lemon cupcakes with a strawberry-lemon buttercream frosting. The cupcakes were not very lemony – just a very slight hint so feel free to add more lemon juice!
It is true, I jumped on the sweet and savory bandwagon combo of bacon goes well with everything. So, I really hate baking. There’s no instant gratification and I get sick of sweets fast. I probably also hate baking because it just never comes out right and I feel like I can’t “wing it” as much. So when Michelle asked me to bake a cake for Marcus’s birthday potluck, I said no because I’m not that great of a baker. But after much thought, I decided to attempt some cupcakes instead! I used this recipe from Vanilla Garlic with very very slight modifications.
So Shashuka is a tradition Israeli dish which is basically poached eggs cooked in a spicy tomato sauce and feta. I’ve been wanting to make this for awhile and decided to give it a go. However, I really don’t eat feta too much so I used fresh Mozzarella instead (blasphemous, I know). An alternate to baking this dish is to use a deep, shallow pot and poach the eggs on the stove top. I chose to bake it though so I can type this up while it cooks :)
Tbh, I don’t think this quite taste like General Tso’s sauce and I’m pretty sure I’ve made General Tso’s chicken that tasted more like General Tso’s but I’m calling it this anyways because everywhere on the internet had a similar recipe so whatever! Or you can think of it as a slightly sweet, spicy, tangy BAKED tofu. nomnomnom
I love all dips, spreads, and condiments of all kinds. So when I saw this recipe floating around for an onion marmalade, I immediately started salivating. This is great on all types of meats, sandwiches, crackers, breads omg! I’ve been making bomb goat cheese and spinach paninis with this spread this week.
Oh my dear, I can’t believe its been this long since I’ve updated. IPPE wore me out like a B and I’ve spent the rest of time catching up. Then I had PDC regionals this past weekend and I haven’t quite recovered from it yet. Eternally exhausted :[
Anyways, I’m suppose to be studying right now but instead I dyed my hair back to one color, cooked, and now doing a quick update on my blog :)
This is my first attempt of making anything like this at all so it was pretty decent! Not sure how I would improve it yet – probably add some chopped chives and throw in some type of green veggie but I had to make do with what I had in my fridge.
